Hello and welcome to my website!
My name is Ai Fujita and i have created this E-magazine to show and make people understand what processes food has gone through, which makes them vital for physical and mental health.
When I say processes, i don't mean factory, preservatives or MSG processes.
I mean the scientific side of food.
When you beat an egg, besides from the fact that it results to a yellow or orange liquid mixture, you are actually altering the egg's natural state and breaking down its protein bonds from its structure. This process is called denaturation.
In this magazine features and explains the major chemical reaction taken place in beneficial food we know.
It includes:
- Fermentation
- Gelatinisation
- Denaturation and Coagulation
- Emulsification
- Leavening
- Caramelisation
These six processes are the keys to various cuisines and meals known around the world. Some are foods we eat ourselves everyday of our lives and without them, we would not have had the chance to discover its diversity of taste and texture.
In my opinion, there is always a scientific theory or explanation behind a food we eat. It can vary from pizza to ginger beer to just plain sauce.
Therefore, in this magazine I hope that this will give you a clear understanding of the benefits and chemical reactions that take place in food and that the featured recipes will help you live a healthier
